Banana Bread Coffee Cake

I’m not a morning person at all. I’m that person who can barely function enough to set the coffee maker without injury in the morning, so I do it the night before, so that all I have to do in the morning is stumble into the kitchen and push one button. (I could program the darn thing to eliminate that step, but there are too many steps involved in that for my brain to process…..) When you add in a baby that needs to be changed and fed, dogs that need to be fed and let outside, easy is the name of the game for me. Generally, I will hard-boil a bunch of eggs for the week, bake some bacon in the oven, and breakfast will be eggs, bacon, a piece of fruit if we have any, and coffee. The problem, however, is that I don’t really enjoy hard boiled eggs. I get sick of eggs in general, after awhile. Eggs were, in fact, the only food that I could not have during my entire pregnancy. It didn’t matter how I made them, they just didn’t work for me. With that said, I’m always in search of something that I can make ahead of time that I can just grab and eat in the morning. So, when this recipe for Banana Bread Coffee Cake from Taylor Made it Paleo came across my news feed, I thought I’d give it a whirl.

Different, of course than what you come to expect from Coffee Cake, since there’s not a crapload of brown sugar crumbled all over the top, but my husband and I enjoyed it. It was easy for me to grab a piece to eat, with my coffee in the mornings. Although, I wasn’t sure how to store it, so I just stored it on the counter. I do think that next time, it should be stored in the fridge, since it got kind of funky pretty quickly. 😉

  • Apparently purple bell peppers exist! I was excited when my husband found this plant at @homedepot, and I’m even more excited that I haven’t killed it yet! 🎉 This will be a great way to help us eat the rainbow!
  • “I want to be strong like my mom.” That’s what my oldest told her gymnastics coach on the first day of lessons. Working out is as much for them as it for me. It makes me stronger, healthier, more patient, more energetic. It sets the right example for them. They see what a body is capable of. They see that women are strong. They see what hard work looks like. Yes, I do it for me, but I do it for them, too, and apparently, they are getting it. 🏋🏼‍♀️🤸‍♂️
  • I wanted salad for dinner tonight, so I made salmon burgers, topped with a mango salsa. I had mine on a pile of arugula and spinach and the rest of the family had theirs on buns. 😉Win-win

  • Props to all of those ladies that can workout and still look cute. I am not one of them. 😂🤣Also, @erinoprea might be trying to kill me with her do anywhere workouts. 😂🤣😂🤣You should give them a try.

  • Healthy doesn’t have to be complicated. Chicken sausage, sweet potatoes, bell peppers and broccoli (the peppers and broccoli I cut up yesterday for the kid’s veggie tray) on a sheet pan. Drizzle with avocado oil, sprinkle with salt, pepper, oregano, and some basil. Cook at 400 degrees for 20 minutes and you’re good to go.
  • Easy chicken stir fry for dinner tonight! I used chicken, veggies that I prepped earlier in the week for the kids’ veggie tray and the Stir Fry Sauce from @nomnompaleo. I can’t use orange just though, because it’s bad for my interstitial cystitis, so I used the juice from one of my kid’s juice boxes.... adapt and overcome, right?
  • Yesterday was a struggle with my health. I wanted to work out, but I knew that my body needed rest. It’s okay to rest. It’s okay to recover.
  • My three year old made me this crown and insists that I wear it all the time. She says it’s because I’m the Queen. 👸🏼👸🏼💁🏼‍♀️Clearly, she gets it.... 😂🤣
  • This week has been a rough one. The negative nancies were out in full force, but at the end of the day, their negativity has nothing to do with me, and everything to do with their own struggles. All I can do is offer kindness is return and keep doing what works for me. 🤷🏼‍♀️
  • There’s a 💯 percent chance that I would have completely forgotten that today was cinco de Mayo had I not gotten an email from @nomnompaleo today linking me to this recipe for Instant Pot Carnitas. So, clearly, I had to make it, and it’s SOOOOOO yummy! 😉
