This dairy-free blueberry banana nice cream is made with just two ingredients and is a kid favorite. No fancy ice cream machines required.
A few weeks ago, our family went blueberry picking. We ended up with 10 pints of blueberries, which is awesome since everyone in our house loves them. I made some muffins and these amazing Blueberry Crumb Bars from Lexi’s Clean Kitchen. My kids were also eating blueberries by the fistful. I knew that I wanted to try to make some ice cream with some of the blueberries, too, so I came up with this recipe for blueberry banana nice cream.
The most difficult part of this entire recipe is waiting. At least for me anyway. 😉 For this recipe, I took three overripe bananas, peeled them, chopped them, and stuck them in a ziplock bag in the freezer overnight. I also froze half a cup of blueberries. I used fresh blueberries and froze them, but you could absolutely use frozen blueberries if you have them.

For this step, you simply put the frozen fruit into the bowl of a food processor and process until it looks like ice cream. You may need to add a dash or two of almond or coconut milk in order to get it to the consistency that you want. You may also want to add a bit of honey or maple syrup if your bananas aren’t very sweet. I didn’t have to add either, but everyone’s tastes vary. Once it reaches the desired consistency, you can enjoy it then, or stick it back in the freezer for a few minutes if you want it scoopable.
