The last year and a half was a bit of a doozy, in the best possible way, for my family. We bought a house, moved, and welcomed baby number five to our family. One of the most helpful things during all of those transitions was having a staff of make ahead freezer meals on hand.
Easy Make Ahead Egg Muffins
These easy make ahead egg muffins are so easy your kids can make them. I usually have the kids help chose what they want in them, and help wash vegetables, chop ingredients and mix things together. Using a soup ladle also helps them fill the muffin tins with the egg mixture without too much mess. After I cook these, I let them cool completely, wrap them in freezer paper or aluminum foil and pop them into the freezer. When we want to eat them, I just move them from the freezer to the refrigerator the night before to allow them time to defrost and warm them in the oven. You absolutely could reheat them in the microwave too. We just don’t have one, so I’ve never reheated them that way.
Sweet Hawaiian Crockpot Chicken
These Sweet Hawaiian Crockpot Chicken is so simple. To make make this a freezer meal, simply chop all of the ingredients, add them to a freezer bag, whisk together the sauce ingredients, and pour those into the bag. For added flavor, you can brown the chicken in a skillet for a few minutes, let it cool completely and then add it to the freezer bag. When you are ready to cook it, simply let it defrost, pour it into your slow cooker and cook on low for 6 hours.
Crockpot Pulled Pork Chili
To make this chili a freezer meal just add everything to a gallon sized freezer bag. When you are ready to cook, just dump it into your slow cooker and let it cook all day.
Cilantro Lime Pork Shoulder
